Strawberry Orange Cobbler

Years ago, we camped with friends who introduced us to a dutch oven campfire cobbler that has become such a staple on our camping trips that some of our other friends now refer to my husband as “Cobbler”. I think some of them look forward to the cobbler even more than they look forward to spending time with us…LOL!!! 🙂

On almost every single camping trip, the cobbler gets made by me – the low carb, gluten-free girl, who can’t eat it. Cue the violins, right?

Believe me, I tried to make it gluten-free and it just didn’t work. My sons complained and it just didn’t taste good. In fact, it tasted so bad that even I didn’t want to eat it.

And why eat anything that doesn’t taste good???

After I went low carb, it got even trickier. I didn’t really want my cobbler to taste like coconut flour and almond flour was just too gritty. I just went without.

But then one day, I persevered. I stared down everything in my kitchen cabinet and my eyes landed upon the whey protein powder. I’m not always a fan of whey protein powder because it can lend a slightly “off” taste when it’s baked…

BUT NOT THIS TIME!

It was perfect!

The cobbler topping bakes up light and sugary and crisp and there is no “off” flavor. It’s almost more like a the topping on apple crisp.

I used plain, unsweetened whey protein powder. (Here’s the brand I like.) Combine it with the fresh strawberries and orange extract (affiliate link) and flavor is divine.

I used my air fryer (affiliate link) because it’s so quick and easy, but I’m sure this would work fine in the oven, too. Just watch it closely!

Strawberry Orange Cobbler

This low carb, gluten-free cobbler is warm, gooey, sweet and crispy all at the same time. It's perfect with (or without) a little whipped cream.

Ingredients
  

Fruit Base

  • 1 c strawberries sliced
  • 2 t Pyure Sweetener or 4 t sugar, if not low carb
  • 1/4 t orange extract

Topping

  • 3 t plain (unsweetened) whey protein powder
  • 1 t Pyure Sweetener or 2 t sugar, if not low carb
  • 1/8 t baking soda
  • 1 T cold butter

Instructions
 

  • Preheat Air Fryer to 325 degrees using the Bake setting.
  • Mix together the ingredients for the fruit base and place in a 1 c ramekin.
  • Mix together the whey protein powder, Pyure and baking powder. Cut in the cold butter until crumbly. Place on top of the fruit base.
  • Cook for 5-6 minutes. The topping should just start to brown and turn crisp.
  • Remove and let cool slightly.
