Strawberry Orange Cobbler

This low carb, gluten-free cobbler is warm, gooey, sweet and crispy all at the same time. It's perfect with (or without) a little whipped cream.

Ingredients
  

Fruit Base
  • 1 c strawberries sliced
  • 2 t Pyure Sweetener or 4 t sugar, if not low carb
  • 1/4 t orange extract
Topping
  • 3 t plain (unsweetened) whey protein powder
  • 1 t Pyure Sweetener or 2 t sugar, if not low carb
  • 1/8 t baking soda
  • 1 T cold butter

Method
 

  1. Preheat Air Fryer to 325 degrees using the Bake setting.
  2. Mix together the ingredients for the fruit base and place in a 1 c ramekin.
  3. Mix together the whey protein powder, Pyure and baking powder. Cut in the cold butter until crumbly. Place on top of the fruit base.
  4. Cook for 5-6 minutes. The topping should just start to brown and turn crisp.
  5. Remove and let cool slightly.
