Honey Mustard Salad Dressing… Oh, how I love thee… Seriously…

I’ve missed you so…

And now, YOU’RE BACK!!!

Before going gluten free and low carb, one of my favorite restaurant salads was the Honey Mustard Chicken Crunch Salad at Perkins. It had all the vegetables you could want – all served up along side some “bad girl” crunchy chicken tenders. Sweeten it all with an amazing honey mustard dressing and I was in heaven (and blood sugar hell, I’m sure)!

I hadn’t tried to copy the salad before now. I really didn’t have a way to make the chicken, so it was rather pointless.

Until now, that is. I now have an air fryer, so crunchy, gluten-free fried chicken just might be back on the menu. (I’ll let you know when I perfect that.)

I LOVE my air fryer. It’s big enough for my large family and it really does cook fast. Here’s a link to the one I got, just so you can see it.

Back to the Low Carb Honey Mustard Dressing, though. My version is easy. (Okay, pretty much everything I make is easy, so I know you’re not surprised.) It’s also low carb, gluten free, dairy free and sugar free. It definitely works for all of you THMers (as an S) and Keto people, but not so much for my Paleo or Whole 30 friends (because of the sweetener).

Low Carb Honey Mustard Salad Dressing

Creamy, sweet and tangy enough to make your taste buds dance…

Ingredients
  

  • 1/2 c Super Easy Mayo (see link below) or regular mayo
  • 1 t Pyure or 2 t Swerve or erythritol
  • 4 t dijon mustard
  • 1/8 t garlic powder
  • 1/8 t onion powder

Instructions
 

  • Mix.
  • Chill.
  • Serve.
  • That was difficult, wasn’t it?
