Cinnamon Granola Cereal

I have to admit – I have a problem with this Cinnamon Granola Cereal. I CAN’T STOP EATING IT!!! It’s that good!

I grew up on cereal. It was easy and I thought it was healthy. I mean, just look at that long list of vitamins and minerals on the side of the box, right?

Every Saturday morning, my sister and I would get up early, grab a cereal box, sit on the orange and black shag carpet right in front of the TV and watch every single cartoon we possibly could before our parents got up. Saturday was their day to sleep in, so this was pure FREEDOM!!! Fred, Barney and Fruity Pebbles Freedom, that is.

Once I grew up, I realized that grains, sugar and low carb don’t play nicely together, so I cut the cereal out completely. My flakes were no longer frosted and my charms were no longer lucky. I believe people refer to this as Adulting. Ugh!

But sometimes, I still want to grab a quick bowl of cereal…and that’s where this recipe comes in.

I’ve tried other low carb breakfast cereals and never found one that I liked. I’ve also tried other low carb granola recipes and didn’t really care for those either. But, I had never tried making something that was a mix of both.

So, in true childhood fashion, I put on my thinking cap, went to work and created this Cinnamon Granola Cereal.

Scooby-dooby-doo…I NAILED IT. It’s delicious!

Now I just have to find a cardboard cereal box and some orange and black shag carpet and I can fully relive my childhood.

Papa Smurf would be so proud!

Cinnamon Granola Cereal

Cinnamon Granola Cereal (Air Fryer version)

Sweet and crunchy – just like cereal should be!

Ingredients
  

  • 1/4 c butter metled, but not hot
  • 3 T Pyure Organic Stevia Blend or 6 T other low carb sweetener
  • 1 t cinnamon
  • 1/4 t salt
  • 1/4 c almond flour
  • 1 c sunflower seeds
  • 1 c pecan pieces
  • 1/2 c shredded, unsweetened coconut
  • 1/2 c slivered almonds

Instructions
 

  • Do not preheat your Air Fryer.
  • Mix the melted butter, Pyure, cinnamon, salt, egg white and almond flour together.
  • Add the remaining ingredients and mix thoroughly.
  • Grease your pan and then spread the cereal on it. 
  • Cook at 300 degrees on the Air Fryer setting for 4 minutes.  Stir and then cook for the remaining 3 minutes.
  • Remove from the Air Fryer and allow to cool completely.  

BTW, I haven’t tried this in the oven yet, because it’s so quick and easy to make in my Air Fryer. Let me know if you do!

    1. I wouldn’t recommend it because of the egg. Try it in a regular oven if you don’t have an air fryer. 🙂
