Super Easy Mayo

I love mayo! Especially Super Easy Mayo!

One Christmas when we were first married, I gave my husband a wish list full of gift ideas for me. This was something my family ALWAYS did, so I made sure he had lots of options. I loaded it up with a bunch of kitchen items, such as a food processor, stand mixer and immersion blender – all things that a newlywed would want.

Later, I found out that his family NEVER makes wish lists, so when he received my list, he was a little unsure of what to do with it. He didn’t want to ask me and he didn’t want to disappoint me, so he pretty much bought me EVERYTHING on the list.

Let’s just say it was quite the Christmas…

One of the items I received that year was an immersion blender. I honestly wasn’t quite sure what to do with it, but it looked like a great gadget, so I figured that I must need it.

Well, I didn’t use that thing for years. It sat in my cupboard for the longest time, because I honestly didn’t know what to do with it.

Then, I went healthy and realized what’s in 99% of store-bought mayos – canola oil and/or soybean oil. Both are inflammatory and highly processed and I don’t want those in my food!!!

The other 1% – they’re often expensive – like $10/jar expensive. OUCH!!!

And if I’m being truly honest, I never even found one I really liked.

That left me with one option – make my own.

If you’ve ever made your own, you know that hauling out a food processor or a blender and cleaning them for something little is just too much work. And I’m all about easy.

So, I went without…or I compromised…

until I found an immersion blender method.

This really is Super Easy Mayo. You make it right in the jar you store it in, so all you have to clean is the immersion blender.

It’s also super fast. It takes longer to get out the immersion blender than it does to actually make the mayo.

And the taste? It’s super great. (You needed to read the word super one more time, right?) You can season it any way you want.

My go-to is this recipe, but play with it and make it your own.

Super Easy Mayo

I know, I know…  I was super creative with the name for this recipe.  But once you make it, I think you’ll agree.

Ingredients
  

  • 1 egg (large)
  • 1 c olive oil NOT extra virgin
  • 1/4 t pink Himalayan salt
  • 1/2 T Dijon mustard
  • 1 T lemon juice

Instructions
 

  • Crack the egg into a jar that is slightly wider than the head of your immersion blender.
  • Add the oil.
  • Place the head of the immersion blender at the bottom of the jar.  Turn on high.  The mayonnaise will start to form immediately.  Slowly raise the immersion blender up until all of the oil is incorporated.
  • Stir in the salt, Dijon mustard and lemon juice by hand.
