Method
- Crack the egg into a jar that is slightly wider than the head of your immersion blender.
- Add the oil.
- Place the head of the immersion blender at the bottom of the jar. Turn on high. The mayonnaise will start to form immediately. Slowly raise the immersion blender up until all of the oil is incorporated.
- Stir in the salt, Dijon mustard and lemon juice by hand.
