Greek Marinade

Full disclosure: this week’s new recipe, Greek Marinade, is not an original recipe.

It’s a family favorite that has been passed down for at least three generations.  I would love to give proper credit, but I have no idea where it came from and unfortunately, my grandmother can’t tell me. 

I can tell you though, that this Greek Marinade is dearly loved.

And often requested by others with whom I do not share DNA.

I did update the type of oil and the type of salt to make it healthier, but the rest is all original. You really shouldn’t mess with perfection, right?

When I make it, I do put my own little spin on it. You see, in my family, this is always used to make shish kebabs. In fact, my family wouldn’t know how to eat shish kebabs without this marinade. It’s kind of a rule that just doesn’t get broken.

But, if you follow my other recipes, you know that I like things easy. Now, cutting meat into chunks and putting it on skewers is not hard. It doesn’t even really take that long. I just like things easy…like super easy. (Ok, like insanely easy!)

So, for this recipe, I’m going to give you three difficulty levels and you can pick which one is right for you. It’s kind of like a Choose Your Own Adventure book:

Level 1: Beginner Insanely Easy

Dump it all in a bowl, let it marinate and then throw it in the oven as a roast.

Level 2: Intermediate Super Easy

Cut the meat into bite-sized pieces, throw it in a cast iron pan and fry it on the stove top until the meat is fully cooked and the marinade is caramelized. This is my personal favorite!

Level 3: Advanced Still Pretty Easy

If you want presentation, go ahead and make the shish kebabs. (They are kind of fun to eat, afterall.) You just cut up the meat and the onion, thread them onto skewers and grill them up. These cook quickly, so watch them closely!

Greek Marinade

Greek Marinade

This marinade is savory and flavorful with a touch of lemon. It's incredibly easy and versatile, and will be an instant family favorite.

Marinating Time 1 day
Total Time 1 day 25 minutes

Ingredients
  

  • 2 T pink Himalyan salt
  • 2 T dried oregano
  • 2 T dried parsley
  • 3 lemons juice only
  • 1/2 c liquid coconut oil
  • 1 onion large
  • 3-4 lbs. pork

Instructions
 

  • Mix all of the seasonings, lemon juice and liquid coconut oil in the dish you will use to marinate the pork.
  • Add the pork (either as a roast, pre-cut into pieces or as shish kebabs) and onion.
  • Toss to coat.
  • Marinate at least 24 hours. (Toss the meat a few times while marinating.)
  • The meat can then be roasted in the oven, pan fried until all the marinade is reduced or grilled as shish kebabs.
