Greek Marinade

This marinade is savory and flavorful with a touch of lemon. It's incredibly easy and versatile, and will be an instant family favorite.

Ingredients
  

  • 2 T pink Himalyan salt
  • 2 T dried oregano
  • 2 T dried parsley
  • 3 lemons juice only
  • 1/2 c liquid coconut oil
  • 1 onion large
  • 3-4 lbs. pork

Method
 

  1. Mix all of the seasonings, lemon juice and liquid coconut oil in the dish you will use to marinate the pork.
  2. Add the pork (either as a roast, pre-cut into pieces or as shish kebabs) and onion.
  3. Toss to coat.
  4. Marinate at least 24 hours. (Toss the meat a few times while marinating.)
  5. The meat can then be roasted in the oven, pan fried until all the marinade is reduced or grilled as shish kebabs.
