Leeks with Bacon and Garlic

Sometimes you just want to high kick, flip your hair and scream into the mic like the secret rock star you are.

That’s kind of how I felt after creating Leeks with Bacon and Garlic.

I had never had leeks.

Oh, I had bought them before. They sat in my refrigerator taking up almost an entire shelf, looking amazing under the bright lights, all the while laughing at me because I didn’t have any idea what to do with them. They knew they were safe.

Safe, unlike a groupie with a backstage pass.

But no more!

I got out a knife and cut through my fears like a Guns N’ Roses guitar player.

The result? These Leeks with Bacon and Garlic.

They have texture like a bold bass guitar rhythm and flavor like an 80’s rock ballad melody.

They will rock your world.

OK, maybe not…but these Leeks with Bacon and Garlic are so good that they may have have you coming up with your own bad similes.

And possibly buying a pair of leather pants.

I won’t tell.

Leeks with Bacon and Garlic

Leeks with Bacon and Garlic

Ingredients
  

  • 2-3 T butter
  • 3 leeks sliced into 1/4" pieces, whites only
  • 3 cloves garlic
  • 1/4 c bacon pieces pre-cooked
  • salt and pepper to taste

Instructions
 

  • Saute the leeks and garlic in the butter until the leeks are soft.
  • Add the bacon. Continue sauteing until heated through.
  • Season with salt and pepper to taste.
  • Serve warm.
