Cabbage Hashbrowns

I have to admit…even though I follow a low carb, mostly Keto, mostly Paleo diet, there are foods that I just haven’t wanted to banish completely and permanently from my diet. Potatoes are one of those foods.

Now, don’t get me wrong, I actually really LIKE a lot of the faux potato recipes and even prefer them to actual potatoes. But that doesn’t change the fact that I’ve missed hashbrowns – the kind that are extra crispy, perfectly seasoned and hot off the pan.

Until now.

These Cabbage Hashbrowns are so good that I will never need potato hashbrowns again…seriously. Even my 17 year old son came back for seconds!

Cabbage Hashbrowns

Ingredients
  

  • 2 eggs
  • 1 t Simple Seasoning Blend or salt and pepper to taste
  • 3-4 c cabbage shredded
  • 1 T coconut oil

Method
 

  1. Preheat your pan and add the coconut oil.  Swirl to coat.
  2. In a separate bowl, whisk the eggs and the Simple Seasoning Blend (or salt and pepper).
  3. Add the cabbage and stir until it is well coated.
  4. Add the cabbage to the pan and fry until crispy.
